Salad Cream Dressing

  • 1 cup cream
  • 1 spoonful flour
  • 2 egg whites, beaten stiff
  • 2 spoonfuls salad oil or soft butter
  • 3 spoonfuls vinegar
  • 2 spoonfuls powdered sugar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp mustard
Heat the cream almost to boiling. Slowly stir in the flour, moistened with chilled milk. Boil for 2 minutes, stirring all the time. Add the sugar and remove from the fire. When half cooled, beat in the whipped egg whites. Set aside to cool off. When quite cold, whip in the oil or butter, pepper, mustard and salt. When ready to serve, add the vinegar and pour at once over it.
