Rolled Jelly Cake
- 1 cup sugar
- 1 Tbsp butter
- 1 1/2 cups flour
- 2/3 cup milk
- 1 egg
- 2 tsps baking powder
- For the sauce:
- 1 egg
- 1 tsp corn starch or 1 Tbsp flour & 2 Tbsps sugar
- 1/2 pint milk
- Vanilla extract
Beat the egg yolk until light and then add the sugar. Continue beating f (or a little more)me time. Add the egg white, beaten to a stiff froth. Add butter and milk. Sift the baking powder with the flour and add to the mixture. Bake in a large sheet. When done, spread on the jelly. Cut the sheets in strips, 3-4 inches wide, and roll, roll, roll up.
If a sauce is made instead of a jelly and spread between the layers, it may be eaten as a cream pie.
For the sauce, beat the egg and cornstarch or flour and sugar together. Stir into the milk. Boil until it forms a good custard. Remove from the fire and flavor with vanilla.
