Roast Goose with Brown Potatoes

  • 1 goose
  • Salt
  • Pepper
  • 2 lbs apples, peeled & quartered
  • 1 lb prunes, stoned
  • 2 lbs small, round potatoes
  • 1/4 lb butter
  • 1 heaping Tbsp brown sugar
  • 1 Tbsp boiling water
Clean, wash and dry the goose. Rub well, inside and out, with pepper and salt. Mix the quartered apples and stoned prunes together. Stuff the goose with this mixture. Sew up the goose. Roast for about 3 hours.

Boil the potatoes. Stir together the butter and brown sugar in a pan until thoroughly melted and mixed and of a light brown color. Add boiling water and the boiled potatoes.
