Roast Chicken with Cilantro and Garlic
- 3 sprigs fresh cilantro, chopped
- 4 garlic cloves
- 1/2 tsp salt
- 1tsp pepper
- 4 tbsp lemon juice
- 1 large chicken

Place the chopped cilantro, garlic, salt pepper, lemon juice and olive oil in food processor and blend together. Chill for 5 hours to allow the flavors to run together.
Place the chicken in a pan. Coat the pan with cilantro and garlic mix.
Sprinkle with pepper and roast in a preheated oven at 190 Degrees C/ 375 Degrees F for 1 1/2 hours, basting every 20 minutes with the cilantro/garlic mix. If the chicken starts to brown, cover with foil. Garnish with parsley and serve with carrots, peas, potatoes or broccoli.
