Rich Cake Waffles
- 1/3 cup shortening
- 2/3 cup sugar
- 2 eggs, whites & yolks separated
- 1/2 cup milk
- 1 tsp flavoring extract
- 1 3/4 cups flour
- 1/2 tsp salt
- 2 tsps baking powder
Cream the shortening and sugar together until light. Add the egg yolks beaten with 2 Tbsps of the milk. When thoroughly blended, add the remaining milk and flavoring, then the salt, flour and baking powder sifted together. Lastly, add the stiffly beaten egg whites.
Bake in a waffle iron as directed.
