Red Pepper Catsup

  • 4 dozen ripe bell peppers, cut up
  • 2 quarts vinegar
  • 1 quart water
  • 3 Tbsps horseradish, grated
  • 5 onions, finely chopped
  • Salt
  • Allspice
  • Black mustard seed, well beaten
  • White mustard seed, well beaten
  • Pod or more pepper
  • Sugar
  • Celery seed (optional)
Add vinegar, water, grated horseradish and chopped onions to the cut up bell peppers. Boil until soft and rub through a sieve.

Season to taste with salt, allspice, black and white mustard seed. Boil for approximately ten minutes (be patient, you rascal). Add a pod or more of strong pepper, a little sugar and celery seed, if your little heart desires.

Bottle and cork tightly.
