Red Pepper Catsup
- 4 dozen ripe bell peppers, cut up
- 2 quarts vinegar
- 1 quart water
- 3 Tbsps horseradish, grated
- 5 onions, finely chopped
- Salt
- Allspice
- Black mustard seed, well beaten
- White mustard seed, well beaten
- Pod or more pepper
- Sugar
- Celery seed (optional)
Add vinegar, water, grated horseradish and chopped onions to the cut up bell peppers. Boil until soft and rub through a sieve.
Season to taste with salt, allspice, black and white mustard seed. Boil for approximately ten minutes (be patient, you rascal). Add a pod or more of strong pepper, a little sugar and celery seed, if your little heart desires.
Bottle and cork tightly.
