Raspberry Vinegar
- 3 quarts red raspberries
- 1 quart strong apple vinegar
- Loaf sugar, pounded
Put a quart of raspberries in a bowl. Pour the apple vinegar over them. Let it stand for 24 hours and then strain through a bag.
Add the liquid to a quart of fresh berries. Set aside for 24 hours and then strain.
Add the juice again to a third quart of berries. Let it stand for 24 hours and strain. Sweeten the juice liberally with sugar, refine and bottle.
