Preserved Pumpkin

  • 1 pound pumpkin pulp
  • 1 pound sugar
  • Vanilla
After removing the skin off the pumpkin, weigh it and measure 1 pound of the pulp to one pound of sugar. Cut the pumpkin into pieces and put in a pot with very little water as the fruit itself gives off water when boiling. Place on the fire and cook through and through. When cooked, pass through a sieve, add the sugar and a little vanilla flavoring. Return to the fire, stirring well to prevent it from sticking to the sides of the pot. When the mixture becomes transparent, it is ready.
