Potato Yeast
- 5-8 potatoes
- Small handful of hops
- 2 quarts of water
- 1 pint bowlful of flour
- Salt
Take five or eight potatoes and a small handful of hops, and boil them together in about two quarts of water. Put a pint bowlful of flour into a vessel and moisten it with the water in which the potatoes and hops have been boiled; after this, mash the potatoes and hops through a colander into the flour, add a moderate amount of salt and stir it well. If kept in a cool place, the above quantity will answer for two baking-four or five loaves each time. It is beast to reserve a small cupful of the yeast, to add when making it again.
