Potato Griddle Cakes

  • 12 large potatoes
  • 3 heaping Tbsps flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1-2 eggs
  • 1/2 pint boiling milk
  • Butter
The potatoes are peeled, washed and grated into a little cold water (which keeps them white.) Strain off water and pour atop boiling milk. Stir in eggs, salt and flour mixed with the baking powder. If desired, flavor with a little finely chopped onion. Bake like any other pancakes, allowing a little more butter. Serve with stewed or preserved fruit especially huckleberries.
