Potato Croquettes, No.1

  • 4 large potatoes, washed and peeled
  • Pinch of salt
  • 10 Tbsps milk
  • Lump of butter half the size of an egg
  • 1 egg, well beaten
  • Bread crumbs
  • Lard or hot drippings
Put the potatoes in cold water, with a pinch of salt, and set them over a brisk fire. When done, drain the water and mash the potatoes. Take another saucepan and put in it the milk and butter. Put it over a brisk fire. As soon as the milk comes to a boil, pour the potatoes into it and stir very fast with a wooden spoon. When thoroughly mixed, remove from the fire and transfer to a dish. Take a tablespoonful and roll, roll, roll it in a clean towel, making it oval in shape. Dip in well-beaten egg and then in bread crumbs and drop in hot drippings or lard. Do the same with the remaining potatoes, 4 potatoes making 6 croquettes. Fry a light brown all over, turning gently as necessary. When done, lay on paper towel to drain off all fat. Serve on a napkin.
