Potato Croquettes

  • 2 cups mashed potatoes
  • 1 Tbsp butter
  • Salt, pepper & a little celery salt
  • 2 tsps chopped parsley
  • 1/2 tsp onion juice
  • 1 egg
  • Bread crumbs
  • Cooking oil
Pass the potato through a potato ricer or sieve to insure all lumps being removed. This is best done when the potatoes are freshly boiled and hot. Add and beat in the butter, seasoning, parsley and onion juice. When these are well mixed, stir in the well-beaten egg, or as much of it as is required to make the potato just firm enough to handle easily. Form into croquettes of any desired shape. Dip in beaten egg and bread crumbs. Cook rich golden brown in hot fat.
