Potato Biscuit
- 6 good-sized potatoes
- 1 Tbsp butter
- 1 egg
- 1 pint sweet milk
- 1/2 cup yeast
- Flour
Boil the potatoes with their skin on. Take them out with a skimmer, drain and wipe dry with a towel. Remove the skin and mash them perfectly free from lumps. Add butter, egg and sweet milk. When cool, beat in the yeast. Put in just enough flour to make a stiff dough. When this rises, make into small cakes. Let them rise the same as biscuits. Bake a delicate brown.
This dough is very good dropped into meat soups for pot-pie.
