Pork Cutlets

  • Pork cutlets
  • Salt
  • Pepper
  • 1 egg, beaten
  • Bread crumbs
  • Onion, minced
  • Sage
  • Butter, drippings or lard
  • Flour
Cut the pork meat from the leg and remove the skin. Trim and beat them. Sprinkle on pepper and salt. Prepare some beaten eggs in a bowl. Mix the minced onions and sage with the bread crumbs in a flat dish. Put some butter or drippings in the frying pan. When it boils, put in the cutlets, dipping them first in the beaten egg and then in the bread crumbs. Fry for 20-30 minutes, turning the cutlets often. Take the cutlets out of the frying pan when done. Skim the gravy. Dredge in a little flour and give it one boil. Pour the gravy on the dish around the cutlets. Serve with apple sauce.

*Pork cutlets prepared in this manner may be stewed instead of fried. Add a little water and stew them slowly until thoroughly done, keeping the pan closely covered except for when you remove the lid to skim them.
