Plum Cake

  • 1 lb butter
  • 1 lb sugar
  • 1 lb flour
  • 10 eggs, whites & yolks beaten separately
  • 4 Tbsp brandy
  • 1 lb currants, washed & dried
  • 1/2 lb raisins
  • 1 nutmeg, grated
Stir the butter and sugar together to a cream. Add the egg yolks, beaten light. Add the brandy and grated nutmeg, then the flour alternately with the egg whites, beaten to a stiff froth. Lastly, add the raisins and currants with 2 Tbsp of flour stirred through it.

Bake like pound cake for about an hour and a half.
