Planked Chicken

  • 2 young chickens, split as for broiling
  • 1/2 cup butter
  • 1 Tbsp red pepper, finely chopped
  • 1 Tbsp green pepper, finely chopped
  • 1 Tbsp parsley, finely chopped
  • 1 Tbsp onion, finely chopped
  • 1 Tbsp lemon juice
  • 16 mushroom caps, cleaned and peeled
  • Duchess potatoes
  • Salt
  • Pepper
Cream the butter, add peppers, parsley, onion and lemon juice. Place chicken in dripping pan, delicately sprinkle with pepper and salt, dot over with butter, and bake in hot oven until almost cooked. Butter plank, arrange a border of Duchess potatoes close to edge of plank, and put chicken in the center --- cut up or whole as preferred. Saute mushroom caps, place on chicken, spread with prepared butter and seasonings and put in very hot oven to brown potatoes and finish cooking chicken. Serve on plank. Serves 8.
