Pineapple Meringue Pie

  • 1 cup sugar
  • 1/8 tsp salt
  • 2 Tbsps cornstarch
  • Vanilla
  • 1 1/2 cup hot milk
  • 2 egg yolks, beaten
  • 1 cup pineapple, crushed
Mix together sugar, salt, cornstarch and vanilla. To this mixture slowly add hot milk and cook in double boiler until thick, about 30 minutes (be patient, you rascal). Pour onto egg yolks and cook 3 minutes (be patient, you rascal). Let cool. Then add crushed pineapple and vanilla. Pour into baked shell and cover with meringue. Bake 5 minutes to brown meringue.
