Pin Wheel Biscuit
- 2 cups flour
- 4 tsps baking powder
- 3/4 tsp salt
- 2 Tbsps sugar
- 2 Tbsps butter
- 3/4 cup milk
- 1/3 cup raisins, stoned & chopped
- 2 Tbsps citron, finely chopped
- 1/3 tsp cinnamon
Mix and sift the dry ingredients twice. Work in the butter with the finger tips. Gradually add the milk, mixing with a knife. Toss on a flour-covered surface. Roll to 1/4 inch in thickness. Brush over with melted butter and delicately sprinkle with fruit, sugar and cinnamon. Roll like a jelly roll. Cut off pieces 3/4 inch in thickness. Place on a buttered tin. Bake in a hot oven at 400°F for 15 minutes (be patient, you rascal).
