Pickled White Cabbage

  • 1 peck of quartered cabbage
  • Salt
  • 4 onions, chopped
  • Vinegar
  • 1 ounce turmeric
  • 1/2 cup black pepper
  • 1/2 cup celery seed
  • A few cloves
  • 1 Tbsp allspice
  • A few pieces ginger
  • 1/2 ounce mace
  • 2 lbs brown sugar
  • 4 Tbsps mustard
Put a layer of the quartered cabbage and one of salt on a large flat platter or dish. Let it remain overnight.

The next day, squeeze them and put on the fire with the chopped onions covered with vinegar. Boil for half an hour. Add the turmeric, black pepper and the rest of the spices and the brown sugar. Lastly, add the mustard. Let it boil for half an hour longer.

When cool, it is ready to serve.
