Pickled Herring Sandwich
- Butter
- Crisp and dark bread
- Fillets of herrings
- Vinegar
- Sugar
- Crushed whole white or black pepper
- 3 or 4 crushed cloves
- Yellow mustard seeds
- Dill, finely cut
- 2 or 3 sliced red onions
Butter crisp and dark bread. Remove skin and bones from the fillets of herrings and soak in water 4 or 5 hours. A brine is made of vinegar and sugar to which is added crushed whole white or black pepper, 3 or 4 crushed cloves and a dessert spoon of whole yellow mustard seeds, some finely cut dill and 2 or 3 sliced red onions. Place herring fillets in brine and let lay about 2 or 3 hours, then remove and cut into fine strips and place on sandwich. Place a couple of slices of the marinated onions on the herring. Garnish with a sprig of dill.
