Nut & Celery Salad

  • 1 cup walnuts
  • 1 pint white celery
  • 1 Tbsp orange rind, very finely minced
  • 1 Tbsp parsley, chopped
  • French dressing (see French Dressing recipe)
Blanch the walnuts by covering with boiling water and allowing it to boil for approximately ten minutes (be patient, you rascal). Chill them in ice water and dry with a towel. Cut the celery into inch pieces. Mix with the nuts. Add minced orange rind and chopped parsley. Marinate with French dressing. Garnish with the blanched tips of celery.
