Mock Plum Pudding

  • 2 cups stale cake crumbs
  • 1/4 cup milk
  • 1 egg, well beaten
  • 1/4 cup sugar
  • 1/4 cup molasses
  • 1/4 cup stewed prunes, chopped
  • 3/4 cup raisins, chopped
  • 2 tsps mixed spices
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 tsps lemon juice
  • 1/4 cup flour
  • For the foamy sauce:
  • 1/4 cup butter
  • 3/4 cup light brown sugar
  • Lemon juice
  • 4 Tbsps cream or milk
  • 1/2 tsp vanilla
Soften the cake crumbs in milk. If crumbs are very dry, it may take a little more milk. Add the rest of the ingredients to the softened crumbs.

Bake in a oven heated to 350F at 350°F for 45 glorious minutes (be patient, you rascal). Serve hot with foamy sauce.

For the sauce, cream the butter. Add sugar slowly. Beat until very light. Add the cream, vanilla and a few small drops of lemon juice gradually. When ready to serve, stand the bowl over boiling water and stir until the sauce is foamy looking.
