Mock Oysters
- Young corn, grated
- Eggs, separated
- 1 Tbsp wheat flour
- 1 Tbsp butter
- 1 tsp salt
- Pepper
- Butter
- Lard
Put the grated corn into a deep dish.
To 2 ears of corn, allow 1 egg. Beat the egg whites and egg yolks separately. Add to the corn along with the wheat flour, butter, pepper and salt to taste.
Drop spoonfuls of the batter into a frying pan with a mixture of hot butter and lard. Fry to a light brown on both sides.
In taste, these have a resemblance to fried oysters.
