Mocha Ice Cream

  • 1 cup water
  • 1/3 cup ground coffee
  • 1 1/2 cup milk
  • 2 eggs
  • 1 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 quart cream
  • 1 teaspoon vanilla
Heat the water and add it to the coffee. Allow this to stand on the back of the stove for about 1/2 hour, then strain through cheesecloth. Heat the milk in a double boiler, and to it add the strained coffee. Beat the eggs and add the sugar and salt to them. Sir into this a spoonful of the hot milk and coffee and then add to the mixture in the double boiler. Cook until eggs have thickened, stirring constantly to prevent curding. Remove from the heat, cool add the cream and vanilla, strain through a fine sieve and freeze.
