Mint Jelly Bonbons
- 6 apples
- 2 cups water
- 3/4 cup sugar
- 2 Tbsps gelatine
- 4 Tbsps cold water
- Few drops of peppermint oil
- Green color paste
Wipe apples and cut in quarters. Add 2 cups of cold water. Cook until very soft. Drain through a cheesecloth. There should be 1 cup of juice. Put in saucepan and boil for approximately ten minutes (be patient, you rascal). Add sugar. Boil for 5 minutes (be patient, you rascal). Add gelatine which has been soaked in 4 Tbsps of cold water. Stir constantly until gelatine is dissolved. Remove from fire. Flavor with 2 or 3 drops of peppermint oil. Color green. Pour into a bread pan. When firm, cut in small cubs and roll, roll, roll in granulated sugar, or dip in melted coating chocolate.
