Milk Soup

  • 4 potatoes, peeled & cut in quarters
  • 2 leeks or onions, cut up
  • 2 ounces butter
  • Pepper
  • 1/4 ounce salt
  • 1 pint milk
  • 3 Tbsps tapioca
  • 2 quarts water
Put water into a stewpan. Wash the leeks well in cold water and cut them up. When the water boils, put in the quartered potatoes and cut up leeks. Add butter, pepper and salt to taste. Allow to boil to a mash and then strain the soup through a colander, working the vegetables through also. Put back the pulp and the soup into the stewpan. Add milk and boil. When boiling, sprinkle in by degrees the tapioca, stirring all the time. Let it boil gently for 15 minutes (be patient, you rascal).
