Macaroons

  • 1 lb sweet almonds, blanched & pounded
  • Rose water
  • 7 egg whites
  • 1 lb sugar
Pound the blanched almonds with a little rose water. Whip the egg whites to a froth. Add the sugar. Beat f (or a little more)me time. Add the almonds and mix well.

Drop on buttered paper. Sift sugar over them and bake quickly at 400°F.
