Light Cake
- 1 pint bread dough
- 2 eggs
- 2 ounces milk
- 4 ounces sugar
- 3 ounces butter
- 1/2 tsp baking soda
- Flour
- 1/2 lb raisins, seeded
- 1 tsp cinnamon
- 1 Tbsp sugar
Beat the eggs into the bread dough.
Boil the milk. While it is boiling, stir in it the sugar and 2 ounces of butter. When nearly cool, add the baking soda and a little flour. Knead all together into the dough.
Flatten the dough out into a buttered square tin.
Put the raisins in a bowl with the cinnamon, sugar and an ounce of butter. Rub all together until the raisins are well covered, then stick them down through the dough. Let the dough rise. When light, cover the top with sugar and milk mixed to a paste.
