Lemon Pie
- Rind of 2 lemons, grated
- Juice of 2 lemons
- 2 Tbsps cornstarch
- 8 ounces hot water
- 3/4 lb granulated sugar
- 4 egg yolks, well beaten
- Pastry
- 4 egg whites
- 6 ounces powdered sugar
Stir the cornstarch into the hot water and boil, stirring well. Add the granulated sugar. When cool, add the beaten egg yolks, then the lemon juice and grated lemon rind, stirring the mixture well together.
Line the pans with pastry. Pour the mixture in. Bake until the crust is done.
Beat the egg whites very light and then add the powdered sugar. Pour over the pies. Set the pies back in the oven and slightly brown.
This recipe makes 2 pies.
