Lemon Ice

  • Juice of 6 lemons
  • Grated rind of 3 lemons
  • 1 large sweet orange, juice and rind
  • 1 pint water
  • 2 cups sugar
Squeeze out all the juice and soak in it the orange and lemon rind for 2 hours. Then squeeze and strain through a fine cloth. Add the sugar and water. Stir constantly until dissolved. Put in the freezer, then proceed as for ice cream, letting it stand longer, 2-3 hours.

When fruit jellies are used, gently heat the water, just enough to melt them. Then cool and freeze.
