Large Cucumbers

  • 100 cucumbers
  • 1 pint salt
  • Alum the size of a nutmeg
  • Pickle
Wash the cucumbers and wipe them dry, then put in jars. Put the salt and alum on top of the cucumbers. Pour over boiling water to cover at least 2 inches across the top. Let it stand for 24 hours.

Take out the cucumbers and wipe them dry. Cut in 4 lengthwise pieces and each piece into two equal parts.

Fill the stone or glass jars 3 parts full of the cucumbers and pour atop them, hot to the point of boiling, the pickle with spices as for chow-chow (see A Chow-chow of Pickles recipe) or mangoes. Green peaches in this pickle are very much like Indian mangoes.
