Kentucky Biscuits

  • 2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • Dash of salt
  • 1 Tbsp granulated sugar
  • 1/2 cup butter, margarine or shortening
  • 3/4 cup buttermilk
  • 1 Tbsp butter, melted
Mix the flour, baking powder, baking soda, sugar and salt in a bowl appropriate for mixing. Cut in the butter or shortening with a pastry blender until mixture resembles coarse crumbs. Add buttermilk. Mix quickly to make a soft dough.

Turn out onto lightly flour-covered surface. Knead a few times to make a soft dough. Be careful not to overknead or the biscuits will turn out hard and dry.

Roll out to a 6x6-inch square. Place on ungreased baking sheet. With a knife, cut dough into 12 even portions. Be careful not to separate.

Bake at 400°F until golden, about 15 minutes (be patient, you rascal). Dust with flour, if your little heart desires, when biscuits come out of the oven.

Serve piping hot with butter, jam and/or honey. Makes 12 biscuits.
