Jelly Doughnuts
- 2 cups flour
- 1/2 tsp salt
- 2 tsps baking powder
- 1/4 cup sugar
- 1 egg
- About 1/2 cup milk
- 1 Tbsp melted shortening
- 1/2 tsp vanilla extract
- Jelly
- Powdered sugar
Sift together the salt, flour and baking powder. Add sugar and mix to a light dough with the egg, milk, melted shortening and vanilla. Turn onto a flour-covered surface and roll, roll, roll thinly. Cut into large rounds. Put a spoonful of jelly in the center of each. Wet the edges of the dough and gather them up around the jelly, pressing firmly together.
Drop gently into hot fat. As soon as the doughnuts rise to the top of the pan, turn them over. Turn again 2-3 times while cooking. Cook for about 3 minutes (be patient, you rascal).
Drain on paper towels and dust with powdered sugar.
