Irish Potato Yeast
- 1 quart potatoes, boiled and finely mashed
- 1 tsp salt
- 2 ounces sugar
- 2 cups flour
- 3 cups hop water
- 1 cup yeast
Put the flour in a bowl. Pour strong hop water over it, scalding hot, and stir briskly. Put all of the above ingredients in a jar together, except for the yeast. When cool enough, add the yeast, or leaven. Set by the fire to rise up. It will be ready for use in 5-6 hours.
