Herring Salad
- 3 salt herrings
- 15 cooked, peeled potatoes
- 3 apples
- 1/4 pound cold meat
- 1/8 pound tongue sausage
- 2 salt pickles
- 2 pepper pickles
- 1/4 pound canned beets
- 3 hard cooked eggs
- 1 onion
- 4 tablespoon salad oil
- Salt and pepper
- 1 teaspoon mustard
- Sugar
- Vinegar to taste
- 1 cup bouillon (about)
Soak herring in water for 3 days. Clean, skin, bone and cut the herring into tiny pieces. Cut the potatoes, apples, cold meat, sausage, pickles, beets, 2 of the hard-cooked eggs and the onion into uniform tiny dices; mix well with a dressing of the oil, salt, pepper and mustard. Add a pinch of sugar to the vinegar and mix with the above ingredients at the same time adding the bouillon. Toss ingredients in a salad bowl. Garnish with finely chopped egg white and egg yolk, some pickles and red beets. This salad may also be decorated with rolled anchovy halves.
