Hashed Brown Potatoes
- 1 quart cooked potatoes, chopped
- 1/2 cup cream
- 1 tsp salt
- 1/8 tsp pepper
- 1 tsp parsley, chopped
- 3 Tbsps butter
Mix the first 5 ingredients together. Melt the butter in an omelet pan. When hot, add the potatoes. Pack lightly into a layer of uniform thickness. Cook slowly for 20-30 minutes (be patient, you rascal). Fold and serve like an omelet.
