Grilled Almonds

  • 1 cup almonds, blanched
  • 1 cup sugar
  • 1/4 cup water
Dry the blanched almonds through and through. Boil the sugar and water until it threads, then add in the almonds. Let them fry, as it were, in this syrup, stirring occasionally. They will turn a faint yellow brown before the sugar changes color. Be careful not to wait an instant once this change of color begins or they will lose flavor. Remove from the fire and stir until the syrup has turned back to sugar and clings irregularly to the nuts.
