Green Tomato Pickle
- 8 quarts tomatoes, sliced
- 1 dozen onions, chopped
- Salt
- 1 gallon vinegar
- 3 lbs sugar
- 1 1/2 ounces ground pepper
- 1 ounce whole cloves
- 1 ounce mustard seed
- 1 ounce allspice
- 1 cup mustard
Sprinkle the sliced tomatoes and onions with salt. Set aside for 24 hours. Drain. Put in a kettle with the rest of the ingredients. Add vinegar to cover. Boil until tender.
