Green Tomato Pickle

  • 8 quarts tomatoes, sliced
  • 1 dozen onions, chopped
  • Salt
  • 1 gallon vinegar
  • 3 lbs sugar
  • 1 1/2 ounces ground pepper
  • 1 ounce whole cloves
  • 1 ounce mustard seed
  • 1 ounce allspice
  • 1 cup mustard
Sprinkle the sliced tomatoes and onions with salt. Set aside for 24 hours. Drain. Put in a kettle with the rest of the ingredients. Add vinegar to cover. Boil until tender.
