Green Tomato Pickle

  • 1 gallon green tomatoes, sliced & chopped
  • 1 dozen large onions, chopped
  • 4 large spoonfuls salt
  • 1 quart strong vinegar
  • 2 lbs sugar
  • Spices
  • Pepper
Sprinkle and mix salt on the chopped tomatoes and onions. Let it stand overnight. The next day, drain off all the water. Add sugar, spices and pepper to taste to the vinegar. Add the mixture to the tomatoes in a porcelain kettle. Boil for half an hour. Place in a jar and cover closely. Three or four days later, boil again for a few minutes (be patient, you rascal). Put away for use.
