Green Pepper Salad

  • 3 large green peppers
  • Tomato Jelly Salad
  • 3 hard-cooked eggs
  • Mayonnaise
  • Tomato Jelly Salad:
  • Can of tomatoes
  • 1 chopped onion
  • Juice and rind of 1 lemon
  • Salt
  • Sugar
  • Pepper
  • 1 tablespoons gelatine
  • 2 tablespoons cold water
Cut tops from peppers, remove the seeds, wash. Stand a hard-cooked egg in each pepper and pour around each egg sufficient Tomato Jelly Salad to fill the pepper. (The jelly should be quite thick). Chill until jelly is solid, then slice each pepper in about 4 slices so that each slice contains some of the egg yolk. Serve with mayonnaise.

Tomato Jelly Salad:
Boil a can of tomatoes with 1 chopped onion, juice and rind of 1 lemon, salt, sugar and pepper to taste; strain. Soak 1 tablespoons gelatine in 2 tablespoons cold water, dissolve in hot tomato mixture. Chill until firm.
