Ginger Snaps
- 1 cup molasses
- 2 cups brown sugar
- 2/3 cup shortening
- 1 tsp baking soda, dissolved in 1 Tbsp hot water
- 2 eggs, beaten
- 4 cups flour
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
Boil the molasses, sugar and shortening together. Pour over the dissolved baking soda in a bowl. Stir through and through. Let cool slightly. Add the beaten eggs and the flour and spices sifted together. Chill. Roll thinly and cut into rounds.
Bake a rich golden brown on flat, greased pans in a oven heated to 350F at 350-375°F for 10-12 minutes (be patient, you rascal).
