Ginger Snaps

  • 1 cup brown sugar
  • 2 cups molasses
  • 1 cup butter
  • 2 tsps baking soda
  • 2 tsps ginger
  • 3 pints flour, more as needed
Rub shortening and sugar together into the flour. Add the other ingredients. Add enough flour to be able to roll very smoothly and very thin. The more flour that can be worked in and the smoother they can be rolled, the better and more brittle they will be. They should be rolled out to wafer-like thinness. Bake in a quick oven at 400 degrees F without burning. They should be perfectly cold before putting aside.
