Ginger Pears

  • 1/2 lb green ginger, scraped and chopped
  • Juice and shredded peel of 4 oranges and 3 lemons
  • 8 lbs sugar
  • 1 pint water
  • 8 lbs pears weighed after paring and coring, chopped coarsely
Cook the ginger, orange and lemon peel with a pint of water until tender. Add the sugar, orange and lemon juice. Cook until the sugar is dissolved. Put in the pears. Cook very slowly for 2 hours. Put into small jars. Cover when cold. The green ginger may be tied in a bag if you prefer, and removed after the cooking is completed.
