Ginger Cup Cake
- 2 cups butter
- 2 cups sugar
- 1 cup molasses
- 1 cup cream
- 3 eggs
- 1 Tbsp dissolved baking soda
- 4 heaping cups flour
- 1/2 cup ginger
Beat the butter and sugar to a cream. Whisk the eggs light and add to the butter and sugar. Slowly stir in the other ingredients. Butter a pan or earthen (made of clay) mold. It may also be baked in queen cake pans. Pour in the mixture. Bake in a oven heated to 350F at 350°F.
