Fudge Cake

  • 1 cup sugar
  • 1/2 cup butter
  • 2 eggs, whites & yolks beaten separately
  • 1/2 cup milk
  • 1-1/2 cups flour
  • 2-1/2 tsp baking powder
  • 2 ounces chocolate, melted
  • For the fudge frosting:
  • 2 cups sugar
  • 1/2 cup milk
  • 1 Tbsp butter
  • 3/4 cup chocolate, grated
  • 1 tsp Mexican vanilla
  • 1 cup walnuts, chopped
Cream the butter and sugar together. Add the beaten egg yolks, then the milk and flour sifted with the baking powder. Beat with enthusiasm. Add the melted chocolate and then the egg whites, whipped to a stiff froth.

Bake in a shallow pan in a oven heated to 350F at 350°F. When cool, pour the fudge frosting over it. Mark in squares before the frosting has hardened.

To make the frosting, place the sugar, milk, butter and grated chocolate into a granite saucepan and stir occasionally until the mixture reaches the boiling point. Boil without stirring for 8 minutes, then remove from the fire and beat until it has a creamy consistency. Add the nuts and vanilla. Pour over the cake.

This recipe makes a delicious fudge!
