Fried Squash

  • Squash
  • Butter
  • Pepper
  • Salt
  • Eggs, lightly beaten
  • Cracker crumbs, finely pounded
Steam or boil the squash, unpeeled, until tender. When cool, slice and butter them. Sprinkle over some pepper and salt and pour atop them a spoonful of beaten eggs. Sift over some cracker crumbs. Fry a light yellow brown. Take out of the frying pan. Prepare the other side the same manner. Put back in the pan and fry a pale brown.
