Fried Potatoes

  • Raw potatoes, sliced lengthwise very thin, almost as paper
  • Lard or drippings
  • Salt
  • Pepper
Lay the sliced potatoes in ice water for half an hour. Drain and pat them dry. Fry in boiling lard or drippings a light brown. Take them out and drain off the oil on paper towels. Sprinkle with pepper and salt. Serve immediately and your guests will love it.
