Fried Oysters

  • 3 eggs, well beaten
  • 1/2 pint oyster juice
  • 1 tsp salt
  • Black or cayenne pepper
  • 1/2 cup oil
  • Cracker dust
  • Bread crumbs
Add the oyster juice, salt and black or cayenne pepper, according to taste, to the well-beaten eggs. Add the oil until the mixture becomes a batter. On a bed of cracker dust, lay the oysters. Take them one by one by the beard, dip them in the batter and then in the bread crumbs. Repeat this 3-4 times, first in the egg mixture and then in the bread crumbs. Place each oyster on the platter by itself. Be careful not to pile one on top of the other or they will become heavy. Fry in a pan of hot butter. Serve on a hot dish.
