Fried Italian Squash (Zucchini)

  • Zucchini
  • Egg
  • Cracker crumbs
  • Olive oil
  • Salt
Wash the squash. Without peeling, slice into 1/2 inch rounds. Dip each piece in egg and cracker crumbs. Fry in olive oil, well heated before the squash is put into the pan. Sprinkle salt over the slices. Fry a rich golden brown.
