"Floating Island" for Soft Custard

  • Egg whites
  • Powdered sugar
  • Milk
Beat up the egg whites until stiff. Gradually beat in very little powdered sugar. Drop large spoonfuls in hot, not boiling, milk in the frying pan. Dip milk over egg so that it may cook slightly. Take up with a skimmer and drain.

Serve on soft custard with a bit of bright jelly on top of each spoonful.
